Vegan Pozole Verde Soup

This healthy and delicious vegan pozole verde (green posole) is super easy and tastes like an all-day soup! Simple & hearty! 

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 Fresno OR 1 jalapeno pepper, seeds & ribs removed and chopped (leave ½ of the pepper with seeds for extra heat)
  • 4 garlic cloves, minced
  • 1 ½ teaspoons cumin
  • 1 ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ¼ tsp black pepper
  • 1 30 oz can Mexican-style hominy, drained and rinsed
  • 2 cans pinto beans, drained and rinsed
  • 68 tomatillos (about 1 lb.), husks removed, thoroughly washed and chopped
  • 4 cups low-sodium vegetable broth
  • 2 limes, plus more for serving if you wish

Instructions

  1. Place a heavy pot over medium and heat the oil for 3-5 minutes
  2. Add the onions to the pot and and saute until softened and translucent, approximately  5 minutes, stirring frequently 
  3. Add the garlic, fresno (or jalapeno), cumin, oregano, salt and pepper. Cook for 1 minute more, stirring frequently
  4. Add the pinto beans, tomatillos, hominy and vegetable broth. Allow to come up to a boil and then reduce heat to low and simmer for 30 minutes
  5. Remove from heat & add cilantro & lime juice
  6. Season to taste with additional salt, pepper, & lime juice
