Vegan BBQ Jackfruit Pulled “Pork”

5 ingredients & less than 30 minutes! These vegan BBQ jackfruit pulled “pork” sandwiches are comfort food with no guilt! Under 100 calories!

Ingredients

  • 3 14oz cans of Jackfruit in water or brine
  • 1 small onion, diced
  • 1 cup BBQ sauce (not all BBQ Sauce is vegan – but my recipe is!)
  • ½ cup water
  • 12 tablespoons of your favorite hot sauce (optional)

 

For serving:

  • 68 vegan buns
  • Vegan mayo
  • Sliced pickle
  • Sliced onion
  • Lettuce
  • Vegan Coleslaw

Instructions

  1. Rinse and drain the jackfruit very thoroughly.
  2. Slice off the tougher center ‘core’ part of the jackfruit. Once you have removed the core pieces, run your knife through them to chop them in smaller pieces and add them to the rest of the jackfruit. This is an optional step but helps with texture!
  3. Heat the oil in a heavy pot or large skillet over medium heat. Add the chopped onion and cook, stirring occasionally, for 3-4 minutes until the onions are softened
  4. Add the BBQ sauce & water, and stir to combine.
  5. Reduce heat to medium-low and cook, covered for 25-30 minutes. If the sauce becomes too thick, add water 1 tablespoon at a time and stir to fully combine. If the sauce is too thin, continue cooking (uncovered) on medium-low until it reaches desired thickness
  6. Serve on your favorite toasted buns with pickle, onion, vegan mayo, lettuce and some simple vegan coleslaw. (Or on white bread with nothing on it! You do you!)
